Flattest route would be I25 north to 287. 287 to I80. I80 to WY 311. 311 to 14. 14 to Hwy 40.
With this route, the only pass is Rabbit Ears (can't really avoid that one). It is steep, but passing lanes going up both sides.
Poudre Canyon is a nice drive, but not sure you will like it if you are uncomfortable driving in the mountains. And, if you get stuck behind a slow big rig, there really isn't anywhere to pass.
Going down to I70, across to hwy 9 up to 40 is the way I go (living in a western suburb). Not a bad drive at all, but there can be a lot of traffic, especially on a weekend.
