I would say Palo Dura Canyon south of Amarillo. But if you are going to the Grand Canyon then you can skip Palo Dura.

Petrified Forest NP in Arizona.

I'll second the National Cowboy Western Heritage Museum in OKC.

I will HIGHLY recommend the National Atomic Museum in Albureque. It's just a couple miles south of I-40 on Eubanks road, and it's katty-korner from a Costco so you can reprovision supplies and food, and gasoline, there.

I kid you not, it is absolutely worth the visit. Allow several hours, even 3 or 4, to see it. They also have a 9 acre outside museum of planes and missiles and such.

I stop every time I go through Albuquerque.

Amarillo has a very nice RV park, with limo ride to Big Texan Steakhous

Bandera, TX, south of I-40, but not much is the Cowboy Capital of the World (Old Bandera Pass Cattle drive)

Fredericksburg, TX.. German town and Military Museum (if open)

I-40 has a big area, 7 Stations of the Cross which is very nice to see.. big RV parking area

Understand NM is not letting people in unless you are a NM resident if you are going that far.

Cadillac ranch - Amarillo. Not really a place to stop, more of a watch it go buy. Bisti badlands and Chaco canyon Indian ruins off 550 on stretch from i40 to moab outside Bloomfield NM.

Lots of Rt 66 stuff. At Shamrock TX there's an old restored art deco Conoco service station. Santa Rosa NM has Blue Hole (might be closed at the moment). Midpoint Cafe at Adrian TX. Out front the have the half way route 66 sign people use for photo ops. Lots of other stuff but I'm drawing a blank.

Now that's funny. Anywho, in Amarillo there is the Big Texas Steak House that if you stay anywhere near Amarillo its a must go and have a steak. Palo Duro Canyon is a nice overnight spot. New Mexico there is the Meteor Crater and petrified forest and a lot of open beautiful country. Some Native American shops to get some pottery or other neat things.

Oh, Nashville there is the Hermitage. Andrew Jacksons home and museum. Be aware though Nashville is a big Covid 19 hot spot. Check to see if the museum is even open. Have patience going through Memphis, it will feel like it takes forever.

Of course there is the Grand Canyon NP in AZ and on to Page and Lake Powell

On I 40/Rt 66 is the little historic town of Williams, Az. Among other things there have an old fashion train that takes you to the Grand Canyon and back. There are a few campgrounds in the area. Fun place to park it and just walk around.
