Our first two or three trips to Mexico had Happijacs on a Hallmark camper. They worked fine. Torklifts are more expensive and lockable, very few people would have any idea how to get a camper off anyway. Best advice is to be very flexible and take it slow and easy. A schedule is sort of like Johnny Deep said in Pirates of the Caribbean "just a guideline".
Taking dogs to Belize-expect to pay a large bribe , $100 to $200. Haven't driven in Guatemala, but spent 2 months there and the drivers are faster and pushier than in Mexico. Also fewer roads so fairly heavy traffic. I wouldn't expect to find any ULSD fuel, it may claim to be low sulfur and we interpret it as ULSD.
In most situations(not mud) roads are 2wd, if an old Chevy 2wd pickup can't travel the road you probably don't want to be there anyway.
Don't miss Tikal, one of the wonders of the world. There is a back road to get there from the Palenque, Mexico area that is quite doable.
Get a Guia Roji-the Mexico travel map book that covers Belize and Guatemala also. Find it in Laredo(best) or a large Pemex in Mexico. Actually can be harder to find in Mexico than US(Amazon).
