A couple of things for you to consider: Kentucky has a fine, and unique, system of Parkways. For expample you could drive from Lexington, KY (a fine place to stop) to Elizabethtown on the Bluegrass Parkway, then west on the Western Kentucky Parkway to the area of Land Between the Lakes. You could then cross the river on I-55 from Dyersburg, TN and pick up I-55 down to junction with I-40 at West Memphis, AR. This route avoids both Nashville and Memphis (and the construction there).
I agree very much with 2gypsies about taking US 82 across North Texas to avoid DFW.
Without going in too much detail, here is the outline by city: Hagerstown to Morgantown. Morgantown to Charleston, WV (yes an interstate, but scenic and good parks along the way). Charleston to Lexington, KY and then as above. I have made this route towing and the portion from Lexington to Texarkana many times, following the Kentucky parkways and I-155 along the Mississippi River.
