Another fan of Route 26 here. If you aren't in a big hurry, Fort Laramie and the Oregon Trail wagon ruts aren't too far west of the 85/26 junction at Lingle. Route 26 also passes Chimney Rock a bit east of Scotts Bluff.
Also a fan of route 30 across Nebraska. A bit slower than I80, but no trucks and few cars - IMO a much more relaxed drive.
We have used Country View Campground in Ogalalla and Holiday RV Park in North Platte in past trips.
If you are interested in railroads, the largest rail yard in the world is in North Platte. The Golden Spike Tower provides great views of the yard activity.
