Esyers, I do that route without the fifth wheel all of the time since I have family in Staten Island and Clark, NJ. Will I hit the part of GSP that doesn't allow commercial plates??

If you want to follow the above route and be sure your commercial plates won't be an issue, get off I287 to the NJ Turnpike south to I195 east to the GSP. The truck restriction on the GSP is north of Eatontown and I195 comes in south of there. Another alternate I considered suggesting is route 18 south from the Turnpike but portions of that road for a few miles south of the New Brunswick area can be a traffic nightmare.
BTW we visited Bolt Castle a few years back. Amazing what can be done when money is no object!
