A really cool place to visit along I-80 is the #145 exit in Nebraska. Paxton, NE, has a very unique bar and grill called Ole's Big Game Steakhouse and Grill about 1/2 mile north of the interstate. The original Ole was a big game hunter and has some very impressive mounts all around this restaurant.
