Indy 500 2014 and Daytona 500 and 200

For Daytona, it looks like you'll be there for Speed weeks and Bike Week. Nothing really close to the track that would be open for the entire duration that has full hookups. The real close in spots are just open for the events.
That being said, I sort of like New Smyrna Beach CG.... will accommodate your rig and pretty easy to get to. It's about20-25 miles to the track, but taking back roads, it's an easy ride. If you want to be in closer, check out International RV park... just a couple miles from the speedway and full hookups.
Seating-- for the bike race, you can just about sit anywhere as the spectators are few for the size of the facility. For the 500, get seats as high up as you can. I like the Weatherly Tower as you get good views of pit road entry
