Nobody mentioned FLA Caverns State Park, not terribly far from St Andrews, but a world away. There is a pretty little spring fed river there, and you can rent a canoe from park. Falling Waters State Park is between the two and is a nice rustic park too. Florida has lots of nice rustic state parks including many with springs. If you look at their website, concentrate on the ones that are showing in the Northwest and Northeast sections on the map.
If you are looking for something between FL and Arkansas, I stopped for an overnight at Foscue Creek at Demopolis AL. Would have loved to have stayed a few days, but it didn't work in my schedule then. On a lake/river with lots of waterfront sites and nice clean bathhouses.
FDR State Park in GA is one of my favorites. I am headed there for Easter weekend, again this year.
