Twin Knobs is a nice campground on Cave Run Lake. It's east of Lexington, KY about a 100 miles.
Green River Lake CG might be an option.
There is the Kentucky Horse Park which doesn't have fishing but it does have horses which is better, IMO!
Cumberland Lake State Park has camping.
Red River Gorge is a beautiful area too.
