From our experience with three kids, nine year olds are trail ready so long as you take frequent breaks and carry plenty of water and snacks. I have some great photos of two of our kids, on in the age range on the hidden canyon trail in Zion. Which is steep and has drop offs of hundreds of feet.
Arches is darned hot on the trails in summer, much better in the Spring or Fall and personally not worth more than a couple of days in my book. We were there for the 3rd or 4th time this last June. I left Canyonlands off my list since you really need a vehicle which can go off the pavement to appreciate that park. But you could pair Canyonlands and Arches.
Obviosly you are talking about the major trails only. One cannot truly " experience" Arches in 2 days, let alone with 3 kids.
