Need help planning 2 weeks in Pacific Northwest

In late June of this year we will be starting a family RV trip with our 12 and 16 year old boys. We will be leaving from Redding, CA and ending in New York (home) We are clueless to Norcal, Oregon, and Washington so any help would be appreciated. We are camping in a 35 ft Class A. We prefer to be off grid in more scenic settings. Hiking and especially fishing are important to this family. What can you recommend if we have 2 weeks to spend in the Pacific Northwest?
