It's difficult if not impossible in most places to even BUY homeowner's insurance unless the house has some form of automatic heating system- purpose from ins. company's perspective is to protect against damage caused by lack of heating in cold weather. Turning the heat completely off removes that layer of protection.
If damage occurs as a result of having turned the heat off in the house, that's a failure of duty/breach that can be grounds for denying a claim for the damages.
That's not to say turning it off is a "bad idea"- but it's good to bear in mind that IF any damage results it likely isn't recoverable under a homeowner's policy.
