I agree, you will fit in almost all the parks without a problem. I also don't think you will have a hard time finding a spot that week.
As far as some nice campgrounds along the way, here are a few I would suggest:
Gold Beach Area - Cape Blanco SP
Coos Bay Area - Bastendorf County Park or Sunset Bay SP
Florence Area - Carl G. Washbourne SP (Heceta Head light house is amazing)
Yahachts / Waldport - Tilicum or Beachside SP (both are right near the ocean and I believe the couple prime sites in Beachside are not reservable)
Newport - South Beach SP or Bevererly Beach SP are both nice
Tillamook / Pacific City - Cape Lookout SP, also just north is Nehalem Bay SP, but I haven't been there for quite a while, don't remember much about it.
Astoria - Fort Stevens SP (a little ways from the ocean, but there is a lot to do in that area)
If you want a nice stop on the beach for the day (can't camp) you can drive out just north of Pacific City, that is where the photo below was taken. (Note: not in Pacific City, but north of it a few miles, if you try in Pacific City you will get stuck, the beach to the north is very smooth and has very easy access)

Also in Fort Stevens SP you can walk out to the Peter Iredale shipwreck:
