Don't forget the OP's family consists of two adults along with a 19 year old who, given some proper instruction and time to learn to tow, could be a third driver. That could help ease up on the stress of driving long distances per day.
I'm also on the side of GO FOR IT!. There certainly is A LOT to see of the west if you go as far west as CO/WY, maybe into eastern UT. That keeps going too far north that would add driving time.
