A trip to Jerome would be fun, Clarkdale does Concerts in the Park every other Saturday. Nice way to spend the evening. There are two restaurants across the street from the park as well as interesting places to eat nearby in old town Cottonwood. Also in Cottonwood there is the Blazin' M Ranch, offering chuckwagon style dinner with cowboy entertainment. The Verde Valley is becoming a Wine area and a local brewery just opened recently in Cottonwood.
As far as drives go, Oak Creek Canyon is nice. A trip over Mingus Mountain to Prescott is also nice. There are many, many miles of forest service roads with opportunities to see elk, antelope and deer.
