Stoves..you mentioned a Coleman..are you thinking propane or liquid? I am guessing propane..more money but more stable. Anyway..if liquid? Do shop a bit...REI has some outstanding outdoorsy/hiking/small stoves and cook sets.
A person wants to try and avoid cooking IN the vehicle..all the moisture goes right to the soft materials...blankets, clothing and so on. Then it's a bugger to get dry and warm.

yes cooking inside would be stupid. There is someone in Austin Texas who lives in there Prius and they built a simple slide out table that is supported by their bed and boxes in the back of their prius. It's about 4 feet in length, but they only slide it out a couple feet. I'll be doing that.
I'm thinking of sticking with propane, easier to find and not to expensive. I think about 3-5 dollars per week in propane. Thats if I cook everyday, once a day
