I actually live off 1431 between CP & MF, and it does indeed get really nice in the spring with the bluebonnets blooming!! Lots of riders on that road.

Also, Willow City Loop is very nice. Beautiful ride!!
It's north of Fredericksburg, and close to Enchanted Rock, so you should check it out too!!

Texas Hill Country. But then again, I'm biased.

Underappreciated is Big Bend National Park in West Texas. There are about 150 miles of paved roads within the park. Lots of elevation changes. Lots of curves, including switchbacks. Mountain roads, desert roads and Rio Grande River access points. Plenty of pulloffs. Just avoid Easter week. That's their peak camping event requiring use of overflow areas. Before Easter you'll probably catch the lupins blooming (2' tall bluebonnets).

FM335 and FM336, part of the Three Sisters, also known as the Twisted Sisters, is the best Texas has to offer. This rides best for me taking 336 north from Leakey and then take 335 south. Very scenic.

The Devil's Backbone is a stretch of FM32 between San Marcos and Blanco. This is a popular scenic road with sections built on top of a long ridge, making nice views on both sides. This is tame compared to the above but a nice ride.

There are numerous stretches worthy of motorcycle exploration in Texas. You just need to explore to find them. There is a nice short stretch between New Ulm and Fayetteville for example.
