"Mexican" food varies according to what region of Mexico you're in, just as United States food does. "Tex-Mex" is one of those regional styles, and it's available all over the US. In Texas, a bad Tex-Mex restaurant doesn't last long. Some of the best food you can get comes from the mobile food trucks (aka Roach Coach) you'll find at construction sites, etc., where a lot of Mexicans work.
