We just returned from a non-camping trip to that area. I also recommend doing the bourbon trail, although we only had time to do the Buffalo Trace Distillery. Most of our trip was spent day hiking in the Red River Gorge.
If you can take a day and drive an hour east of Lexington, go to Natural Bridge State Park and see the arch, there is sky lift to the arch if you are not hikers. Nearby is an easy hike to an arch called Sky Bridge. Its as equally impressive as Natural Bridge and a bit more remote. At the very least if you are in the area drive around the Red River Gorge National Geologic Area. IMHO, its one of the most beautiful places in KY.
About 1 1/2 hours south of Lexington is Cumberland Falls State Park. A "must see" sight. Don't camp there though, we looked at the campground and only the smallest trailers can fit in those sites. It was kind of dumpy compared to other KY state park campgrounds.
