I'm not too worried about mold, but I do see your idea there. I've got a lot of experience with drywall, and I dry walled my mobile home which is under trees. It improved the thermal properties immensely, though it doesn't have squat for an R value. Once you get the house cooled, it stays good and cool. Not to mention that it made everything air tight, which wouldn't apply to my travel trailer. I was planning to paint with mold resistant paint. One advantage of the drywall is that if it gets goobered up, it's easy to fix.
I'll give this some thought.
I'm also wondering if I should use the radiant barrier or 3/4 foam board. The foam board has an R value of 2.75, the radiant barrier gives no R-value but it says it has "excellent insulation properties and people seem very happy with it.
This is my first attempt at converting an trailer to a stealth camper. I'm sure to learn a lot here :).
