Best insulation IMO is sprayed polyurethane foam, about a 6 lb density IIRC. You'd get airtightness at the same time with the insulation factor. Cover with luan or whatever you decide. The downside is, you probably would want to hire out the spray job if you have no experience with the stuff. But once it's done, it's an investment in your comfort.
