Regarding the drywall question...
I'm going with mold resistant 1/2 inch drywall. I've dry walled everything I've ever built and never had the first bit of trouble with any of it. Drywall also is good for dampening noise. So there are advantages and disadvantages to any material. Should drywall get damaged, it's uber easy to fix it.
