So I get that you will probably end up at campgrounds but after thinking some and trying to keep it simple, look at these links.
I think it would work for your size space. I would still add a 5000 window unit for when you had ac.

This solar panel should charge one deep cycle marine battery in the Florida sun.

Add one 12vdc marine battery outside on the tonque (for safety) and wire it to a 12vdc fan.
You could do the cooler and try it at home with ac power to see if its feasible.
I use my DIY ice chest cooler outside on the patio and it really kicks out some cool air. Quiet too.
