You said toy hauler, I read cargo trailer. Which is it, an actual toy hauler rv or a converted cargo trailer? Reason I ask is a lot of rv parks I don't think would consider a cargo trailer a camper. May have issues there. Better to check this out IMO. Going stealth? No problem.
Running any decent AC off of an inverter and solar charging, won't be much of an AC. I've saved a lot of $ by living cheeeeep on the road, but summer in FL in a homemade tin can every night doesn't sound awesome to me.
Like said above, there's a reason you don't see drywall in RVs. Actually a bunch of reasons. Please don't Sheetrock the inside of your rv or you'll be the star of Redneck Nurse, not Road Nurse!
Lastly, $5k should get you a small camper with built in amenities and a bath and working AC. I know you're excited bout your towable tiny home, but RV manufacturers make them for a reason. They're better than sleeping in a cargo trailer!
