The oven igniter was almost an afterthought as my main displeasure was with the “hit and miss” burner ignition and we didn’t use the oven all that much. That may change now, as DW doesn’t have to stand on her head to light the oven.
As you point out, about the worst-case scenario is the insulation gets brittle, falls off, and a short develops. The consequences? ... the oven pilot doesn't light! However, since there is not much of a likelihood for anything catastrophic to happen, I felt OK with the wire "as is." Also, as you point out, it would be rare to set the oven above 350-375 anyway - I notice my grill routinely hits 575-600 if I close the lid and these wires were made for installation in grills!
The DW and I obviously didn't take the same CRM (cockpit resource management) training you all did ... the DW may cook occasionally when we camp, but I always get assigned to lighting anything that has a potential for flame, smoke, or explosion! :E
