From the way your current thermostat is wired, this is what you'll need:
Red wire from +7.5 - R on the new stat
Yellow wire from cool - Y on the new stat
White wire from furn - W on the new stat
Blue wire from hi fan - G on the new stat
(if you want to put low on there, it would be the orange wire on the G instead)
Tape off the green wire, it's not needed.
A few things to look out for when you do replace your thermostat:
Make sure to get a battery powered stat if you're using a homeowner version. They run off of 24V AC, not DC like the MH stat does. This one will work fine because it doesn't need power to work, but the nicer stats will need either batteries or 24V AC to work properly.
Also, most homeowner stats do not have a hi/lo fan switch, so that may need to be wired in to a separate switch and mounted somewhere close to the stat. If you know you're never going to use one speed or another, no need for the switch, just make sure you're putting the correct wire on the 'G' terminal.
