This should be a very simple modification. I did something even more extensive when I pulled out an oversized refrigerator and replaced it with something smaller. I put a cabinet on top. It was a simple job to make cabinet doors and stain them to match the rest of the woodwork.
I have been tempted to remove our microwave. We rarely have hook ups and rarely use our generator so the microwave has only been used a very few times. Basically we use it for storing larger pots and pans. They rattle so we stuff in dish towels. A cabinet would work a lot better.
