Because you can not tighten the hose clamp enough to seal the PEX.
Shakbite (Home Depot) or Gatorbite (Lowes).....just cut PEX into clean straight cut then the 'bites' just push on...done
Next best choice would be Flair-IT fittings
PEX in RVs is 1/2"
