We have two quads and maybe 500-600 extra camping gear/water. So, if it 3000 lbs to start and then add 1500 lbs, it is 4500 lbs plus. Any ideas would be helpful.

Unless your Owner's manual says otherwise you have to subtract any weight in the vehicle, other than a 150# driver, from that number to get the ACTUAL max Tow rating.
But, as others have said, you will run out of payload first.
The 3500# GVWR unit may realistically be as high as you can go.
