We looked at the Cougar 301 CAB and the similar Flagstaff Classic Super lite 8528BHWS. We like the floor plan with a smaller bunkhouse and bathroom off of it. Anybody have anything similar that you would recommend?

All I can say "Is a Rock and a hard spot"!!
Load up your 03 RAM CTD like you normally wold for traveling/Camping. Then head to the nearest scale house and get it weighed, get separate axle weights, then compare to your GVWR, there likely isn't much left, I know I drive an 01!!
You can either get a bigger truck, or do as many 2500 owners do and tow over your GVWR. I am over the 8,800# rating of my 01, but still well within axle and tire ratings.
Dodge/Ram offered a Camper Package on my model that place it on one ton springs, Over GVWR, Bags or Timbern's NO WAY don't need them Stock springs keep me level with room to spare, I don't even engage the upper overloads.
I can't recommend it, but I do just fine with it and drive some narrow, main state highways here in Oregon.
My 05 Copper Canyon is 32' and 11,000# loaded with a GVWR of 12,300#.
