I dont consider a locked up brake any more of a lie than a woman trying to manipulate me into doing something she wants by saying that she would do something stupid like put the kids safety at risk. The people in the cabin are walking in and flipping the switch and the OP is driving his butt off, setting up, trying to participate in helter skelter and then knock it all down and drive back to put everything away then get to bed so he gets up for work. Wife isn't being very considerate at all.
Tell the wife to hitchhike up there while OP takes the kids to a local RV water park. Take a Friday off work to make it a nice time.
I think the first question you need to answer is if you even want to party with these people. Is it really how you want it to be? There are plenty of great RV people all over to party with.
There is no way that I'd be setting up for such a short time. If you party with me and your bringing your rig, I'd have power, water, lawn chairs, touch of Tequila and a few kayaks and a pontoon boat waiting in the water. You could bring the rig up when you like and leave it for a while if you're coming back up. That's partying.
I do agree with you on this. The wife IS playing a game with the "if you won't take us, I'll drive it myself". However, I believe the best response is an honest one, not one that creates another wedge in the relationship. Finding a compromise that works for both the husband and the wife is going to be a better answer than responding to a emotional blackmail reaction with another emotional blackmail reaction.
How about the OP be honest with his wife and address his biggest issue: I'll be driving 6 hours just to sit around and wait for them to show up late, then I'll sit around waiting for everyone to agree on something to do, and then it will be time to drive 6 hours back home. I wouldn't mind going if we could work an extra night into the trip and be more organized. I know they don't do schedules, but couldn't WE have a bit more structure in our time and let them join us when it's convenient for them?
I truly believe that an honest discussion will result in a far better trip than playing more games will do.
