Dutchmen, are you adding any solar? Even a modest solar system can sufficiently augment your batteries for the fridge.
4 6v batteries and 300 watts of solar will handle most needs for up to a week. Low sun days will hurt some, as will shorter days in the winter, but even if you can only get back to 95% after the first day, and 90% the next, you still will have over a week before you start running down, and a few hours on a genny will take care of most of that.
With the 120 vac fridge, you wont gain much of anything from the truck, so the solar will even help on your travel days.
As to AC, if you can get by on one unit, any of the 3000 + watt units should cover your needs, you just may need to turn the converter/charger off when you start the AC.
