3Fivers - you refer to this as a flaw but it's not broken, not sure what you're looking for? You received a lot of favorable feedback on the Jayco forum prior to your purchase- didn't you walk thru the floorplan prior to committing laying out cash? Your best bet might be to undertake a remodel project and replace the stock cabinetry with something that opens up the sink area. Not sure what the width of the center cabinet is but I'd guess it's easily replaced by something from a big box home improvement store. Another option might be to look at other layouts in search of a cabinet of the same width and depth but shorter. Option 2 might be best for color match. Jayco has great customer service and would no doubt sell you a different cabinet if you told them what you want.
