As I said, this is only in the thinking stage so any additional comments would be welcomed. If this is the way to go, what kind of piping or tubing would stand that kind of pressure?

You wont like the noise from that compressor, and it draws a LOT of current! Goggle High Pressure Misters and see what you find. I want from hose pressure to ~200psi and it made all the difference. I think there is a system out there at about 400psi, then after that is the big stuff that probably requires brazed copper plumbing.
Theres probably enough moisture in the air most of the time to just add a fan
