You just hit on one of the biggest hot buttons on RV.net. Double towing posts always bring out the fear mongering about length, legality of double towing in each state, weight, insurance, having to drop the 2nd "trailer", and just being a general menace to all those traveling around you. Stay tuned, and I am sure i missed some as well.
I'll answer the question you asked. I think you would be best off with a tow bar if the Fiat can be towed that way. With the dolly, you have to find a place to store it both at home, and when you get to wherever you are going.
I've double towed for nearly 20 years now. I am sure I am over 100,000 miles. I have always been over 65', sometimes up to 73'. I know what the laws are, and make my decisions on what to do with my eyes open.
