I have done it. I have a Garmin RV 760 LMT with camera. I made two power points under my rear bumper. One from the back up lights and one that goes to one of my upfitter switches in the cab.
For just using the truck I quick connect to the back up lights power. With the 5th wheel hooked up I'll quick connect it to the upfitter switch power. The wireless receiver is ziptied under the rear bumper area.
I ran an extension under the trailer to the rear bumper where I made a mount. When I want to swap out the camera, I just unclip it from the truck plate, unplug from camera cable, plug the extension in to that, and plug the camera in at the trailer bumper.
This way I can swap between my GPS map or the back up camera whenever I like, to monitor what's behind me.
Works great and takes just a few seconds to swap out.
