A company called Wirehider specializes in making products to hide wiring. In your situation I would run a wire from the battery...fusing it of course and running it to garage and then up the wall at the end of the bunks and install a ceiling mount light with on-off switch. If your bunks are like mine there is plenty of room for a wall mounted light either at the head board or footboard of the bed. I did a similar setup for a garage freezer, running the wire from battery and only using a floor mounted 12 volt plug.
