I saw an option I really liked. They had a platform welded to the 5th wheel pin box, so the generator sat just above with a box to protect it from the weather.
The pin box is plenty strong enough and it's a convenient height for operation and you could then bolt it down to keep it from walking away.
We have a Yamaha 2400. It runs the air/con but it is close. Bumping up to around a 3000w generator would be better if you can semi-permanently install it.
The twin 2000 is likely going to be more expensive and unless you need to be moving them regularly, more hassle.
