So my main question:
Are there scale drawings of truck beds and 5ver noses? With all the possible combinations it seems logical that accurate measurements would be mandatory.

I've not seen any.
Long bed vs short bed...just personnel preference. I have both and made a living using both pulling the same trailers.
Wheelbase has to do with ride differences not the length of the bed. However a crew cab long bed won't ride much =different (if any) than a crew cab long bed. To many variables to say one rides/handle better than another.
Just because my 2500 short bed Dodge rides better than my neighbors 2500 long bed chevy doesn't means all other are the same.
Your dealer should help you with what type of hitch your truck/trailer combo needs.
I use a 21 year old 16K Reese slider with my 11250 lb 5th wheel trailer. The slider is seldom required to be used...however I like to flip the handle and let the trailer slide 13" back behind the trucks rear axle. Makes for much less steering input while backing in tight places. My 97 5er has the square flat corners. If my trailer was a newer gen with the notched/rounded corners made for short bed trucks I could use a non sliding hitch. My pin is set up zero over the trucks rear axle.
