Not all hydraulic fluids are hydroscopic. True petroleum based oils are not. Even transmission fluid is not hydroscopic. The water comes from head space in the reservoir and temperature changes which causes condensation to form on cooler surfaces. Without leaks the fluid should last many years. It a closed system that is lightly used. ATF fluid is a good hydraulic fluid.
The red color is good for identifing that it is leaking.
