Lot of money riding on our decision.

After re-reading your post, if you are simply worried about a SRW 3/4 ton tow vehicle not having enough of a platform to pull a longer FW in windy conditions, then you don't have anything to worry about, generally speaking. Would a DRW provide a little bit of a broader platform? Of course it would.
That being said, there probably is not a 41-42 foot FW that once it is loaded could be towed with your 3/4 ton truck. You could probably hook it up, load it up, and take off down the road for miles and miles. However, if you took it across the scale and computed your numbers (while loaded) you would quickly realize that you were in trouble.
Being grossly overloaded is not all that uncommon when it comes to fivers, especially if it is your first one. You may even get away with it for a while, until that emergency stop doesn't work out so well, or that transmission burns up at 40,000 miles.
