IMO most of the time grease gets past the rear seal is because the hub seal surface is damaged, or the seal lip is damaged, most likely during assembly.
I stop when I can see grease coming out.
So no real way of knowing if you get grease on the brakes? Pretty much until you overheat your truck brakes when the rv doesn't stop? Lol. I suppose you would tell once you test the brakes which we all should be doing before a trip.
I found a trailer trip computer on my truck actually, the unit basically has 2000 miles and it's 2016...I thought there was much more. Do the bearings really need attention yet? Assuming the factory installed them correctly, I do however have a 10 year warrenty aswell...not sure if they cover that or not
