I don't think I have ever had a pic in the signature line, although I should re-size one and do that. You may have seen a photo link on the DTR or Cummins forum sites.
I can't say enough about the Outback controller....very versatile. The MorningStar you plan on should be awesome as well, but is on the ragged edge of specs for you planned 800W PV array and a 12v system. You may want a larger controller to factor in increased output in cold weather operation. I have seen north of 95A peak output from my 1110W panel array in 20-30deg. temps.
I have used the hammer crimper on most of what I do with good results, but have thought about the Harbor Freight hydraulic on for the tight engine bays I work 1n sometimes.
The Harbor Freight will only do 00 and Cee will likely be doing at least 0000 cable runs to the inverter due to current draw of that 2800.
Are you planing to run you A/C off the inverter? My MS2012 won't quite fire off the 15K btu, but I bet the 2800 would. Since you are building from the ground up, you may take a look at the Dometic Truck line......they have compact ducted 7k btu A/C's that are designed to run all night on an 1000W inverter and 3 group 31's. I was thinking of doing one in the bedroom as I didn't really see the need for the optional 13.5K btu on the roof, but it would be nice for the occasional rest stop overnight during travel where it's a little warm and humid....
