Hate to be a negative person here, but honestly I think you're being a romantic, and not a realist. Seeing the country casino to casino with only a scooter for short trips is hoping for a lot.
If I was you I would get a small TT with a solar panel and a Tundra to pull it. This will give you the ability to figure out what fits your true style, and will be easy to resell when the time comes. Heck, you may even find out that's all an older person with a dog really needs to have a good life on the road.
