We had a Honda Ruckus scooter and it was perfect for travel. We hauled it in our small pickup but it would also haul on a carrier. Caution: carriers are not cheap depending on what the bike weighs. You also have to consider hitch weight on a smaller RV.
We use Verizon Mi-Fi hotspot. We've used it all over the USA with mostly good coverage. If you are in a remote area with limited cell service of course you won't have internet either.
I think it's a great idea to full time while you're young and can enjoy it. You are doing the right thing by researching and asking questions. What is beneficial to most people considering the full timer lifestyle is ask yourself what you would do if you didn't love it and wanted out. An exit plan is a good idea even if you don't think you'll need one.
