I'd start with a new fuel filter. If that doesn't do it next up would be the fuel pump.
I'm not well versed on the vintage Chevy so it may have an in-tank pump with the filter attached.
If it does, I'd replace them both at the same time.
What you're describing is exactly what our '90 Ford chassis did and the above fixed ours. Adding a Banks kit didn't hurt either. We used the smaller kit, the one that kept the factory manifolds.
