2016 Jayco Greyhawk(31FS) - Class C motorhome and sleeps 10. We are looking to rent this RV for a 2-Day/1-night trip. How are the sleeping cabins configured? Does it fit 10 adults?

Yes - it's different. Stuffing people into a vehicle for a short ride is different than having to live/sleep/eat/walk/and use the restroom in a vehicle.
Your goal is to have friends/family for fun - suggest you increase the number of RV's or decrease the number living in the RV.
