2016 Jayco Greyhawk(31FS) - Class C motorhome and sleeps 10. We are looking to rent this RV for a 2-Day/1-night trip. How are the sleeping cabins configured? Does it fit 10 adults?

The OCCC on a Class C of that size will possibly be roughly 1,000 to 1,100 lbs at the most.
You will not be able to just 'look it up' at any manufacturer's website. It varies by model, length, options, etc.
The only way to know for sure is to physically check the weight sticker attached to the motorhome before it left the factory, by the manufacturer.
