If there's an appropriate chassis with one, it might happen. I don't think there's anything inherent in a boxer engine vs. a V or inline engine that would make it especially suitable or unsuitable for motorhome duty. Small aircraft have used boxer engines for eons, and that's hardly light duty operation (cruising for hours on end at 75% power).
Fitting a boxer of reasonable size in a standardish van chassis would probably be quite difficult. You can't really make the Ford doghouse any wider. Something like the promaster or other forward control chassis, where the engine is basically underneath the cab, would probably a little more reasonable for packaging.
